ROCKY ROAD FUDGE CAKE



Rocky road was one of my favorite ice creams growing up, so I decided to make a cake out of it. This moist chocolate cake is an explosion of chocolate chips, walnuts, and mini marshmallows. This one won̢۪t melt! Wrap well and store in the fridge up to five days.
Makes 1 (13 x 9-inch) cake
CAKE BATTER:
12 tablespoons (6 ounces or 170 grams) unsalted butter, softened, plus more for greasing the pan
1¼ cups (8¾ ounces or 250 grams) packed light brown sugar
½ teaspoon salt
3 large eggs
1¼ cups (300 mL) milk, room temperature
1 tablespoon vanilla extract
1cups (8 ounces or 235 grams) all-purpose flour
¾ cup (2¼ ounces or 65 grams ) cocoa powder
¾ teaspoon baking soda
½ cup (3 ounces or 85 grams) bittersweet chocolate chips
½ cup (2 ounces or 55 grams) walnuts, chopped
12 ounces (340 grams) bittersweet chocolate, finely chopped
1 cup (240 mL) heavy cream
12 tablespoons (6 ounces or 170 grams) unsalted butter, softened
½ cup (2 ounces or 55 grams) confectioners’ sugar
1 cup (4 ounces or 115 grams) walnuts, chopped, for garnish
1 cup (6 ounces or 170 grams) bittersweet chocolate chips for garnish
1 cup (1½ ounces or 40 grams) mini marshmallows for garnish

Place an oven rack in the middle position. Preheat the oven to 350°F (180°C). Butter a 13 x 9 x 2-inch baking pan.
To make the batter: In a large bowl, stir the butter, brown sugar, and salt until combined. Stir in the eggs, one at a time until each is incorporated, and then stir in the milk and vanilla.
Add the flour, cocoa, and baking soda to the bowl, then stir until combined. Stir in the chocolate chips, mini marshmallows, and walnuts.
Spread the batter into the pan and bake until the center is just firm and a toothpick inserted into the center comes out with moist crumbs, about 25 to 30 minutes.
Set the pan on a wire rack and let the cake cool completely before frosting.
To make the frosting: In a large heatproof bowl, heat the chocolate with the cream, gently whisking, until the chocolate is melted and the mixture is smooth.

Whisk in the butter and sugar until the frosting is creamy. Spread the frosting over the cooled cake and sprinkle with walnuts, chocolate chips, and marshmallows.
